- Cane vinegar – made from sugarcane
- Distilled vinegar – made from corn, wheat, potatoes, beets, wood and apples
- Fruit vinegar – made from raspberries, blueberries, blackberries, persimmons, tomatos or apples
- Herb vinegar – usually wine or white vinegar with added herbs such as tarragon, rosemary, sage, basil, mint, dill, garlic or marjoram
- Malt vinegar – made by malting barley
- Rice vinegar – made from rice such as white rice, red yeast rice and black glutinous rice.
- Wine vinegar – made from red or white wine
