Foods that are on the “Gas Stars” list contain in digestible carbohydrates which are broken down by bacteria in the large intestine:
| Food Group |
Gas Stars |
| Carbohydrate – Raffinose |
This complex sugar, which is also referred to as a oligosaccharide, is found in large amounts in beans (excluding tempeh, miso, natto and tofu which contribute little or no gas activity) such as red kidney beans, green beans, soybeans and winged beans.
Lesser amounts are found in whole grains, peanuts, pistachios, lentils such as black-eyed peas and chick peas, and vegetables like cabbage, brussels sprouts, broccoli, cauliflower, lettuce, cucumber and asparagus.

Found in onions, artichokes, pears, grapes, figs, dates, peaches, dried fruits (e.g. rasins, prunes, wheat, flavored fruit and frizzy drinks and diabetic food products. |

This non-digestible sugar is found naturally in fruits such as apples, pears, peaches, and prunes. It is also used as an artificial sweetener in many sugar-free foods, gums and candies. |
| Carbohydrate – Starch |
Raw potatoes, corn, noodles and wheat |
| Fiber from undigested complex carbohydrates |
Oat bran, wheat bran, rye, lentils, rice bran, sesame flour, beets, barley and most fruits (including bananas and pears). Soluble fiber dissolves easily in water and takes on a soft, gel-like texture in the intestines.
